Feeling Just Peachy Seafood

Ingredients

  • Shrimp or Fish (e.g. Salmon, Sea Bass, etc.)
  • Feeling Just Peachy Marinade
  • Olive Oil

Instructions

  • Optional: Marinate shrimp or fish. If marinating, dilute the Feeling Just Peachy Marinade with a little water or apple cider vinegar.
  • Heat a pan to high heat for about 2-3 minutes. Lower the heat to medium-high and add the oil to the pan and make sure the entire pan is coated with oil
  • Add the shrimp or fish to pan and cook uncovered for 3-4 minutes on the first side without moving, until the undersides browns. Flip the shrimp or fish and cook the other side until shrimp or fish is cooked through
  • Serve with peach sauce on the fish or on the side

Jerk Eggplant

Ingredients

  • Sliced Eggplant
  • Jamaican Jerk Marinade
  • Water

Instructions

  • Optional: Marinate eggplant. If marinating, dilute the jerk marinade with a little water or vinegar (for best results use apple cider vinegar)
  • Coat eggplant with jerk marinade
  • Heat a pan to high heat for about 2-3 minutes. Lower the heat to medium-high and add the water to the pan
  • Add the eggplant in a single layer to pan and cook covered for approximately 15 minutes on the first side. Flip the eggplant and cook the other side until cooked through

Slow Cooked Jerk Chicken

Ingredients

  • Chicken (this recipe can be used with other poultry or meats such as pork)
  • Jamaican Jerk Marinade
  • Optional: Sweet potato cubed, Onion diced, Bell pepper or other vegetables

Instructions

  • Add jerk marinade to slow cooker
  • Place chicken into slow cooker and coat chicken with jerk marinade
  • Optional: add vegetables to slow cooker
  • Cook for 1 – 3 hours

Jerk Stir Fried Black Beans & Rice

  • Cooked Rice
  • Cooked Beans
  • Jamaican Jerk Marinade
  • Olive Oil
  • Optional: onions, peas, diced carrots

Instructions

  • Heat a pan to high heat for about 2-3 minutes. Lower the heat to medium-high and add the oil to the pan and make sure the entire pan is coated with oil
  • Add jerk marinade to pan and cook about 1 minute
  • Optional: Add vegetables and cook 3-5 minutes
  • Add cooked rice and beans. Cook until everything is heated and marinade is mixed in

Jerk Roasted Vegetables

Ingredients

  • Cubed Potato, Onion, Carrot
  • Jamaican Jerk Marinade
  • Water (to dilute jerk sauce, usually just a couple tablespoons)

Instructions

  • In a large bowl put jerk marinade and water
  • Add cubed vegetables, folding the vegetables into the marinade as you add them
  • Place coated vegetables on a large baking sheet. Bake approximately 30 minutes on 400°F

Jerk Chicken

Ingredients

  • Chicken (this recipe can be used with other poultry or meats such as pork)
  • Jamaican Jerk Marinade (mild or hot)
  • Olive Oil

Instructions

  • Coat chicken with jerk marinade (marinating optional)
  • Place chicken in glass dish and in oven on 400° for 20 minutes, turn chicken and paint with jerk marinade. Repeat twice
  • Turn chicken, paint with jerk marinade and broil 3 to 5 minutes. (Chicken can burn easily with broiling so watch carefully)
  • Turn off heat and allow chicken to rest in pan for at least 5 minutes covered before serving
