- Sliced Eggplant
- Jamaican Jerk Marinade
- Water
Instructions
- Optional: Marinate eggplant. If marinating, dilute the jerk marinade with a little water or vinegar (for best results use apple cider vinegar)
- Coat eggplant with jerk marinade
- Heat a pan to high heat for about 2-3 minutes. Lower the heat to medium-high and add the water to the pan
- Add the eggplant in a single layer to pan and cook covered for approximately 15 minutes on the first side. Flip the eggplant and cook the other side until cooked through
