Ingredients
- Rotisserie chicken
- Splash Of Sunshine Marinade (regular or hot)
- Optional: Veggies (suggestions: thickly sliced carrots and peas), Coconut Milk
Instructions
- Heat large pan on medium high heat and add a half jar of Splash Of Sunshine Marinade and dilute with 1/3 to ½ cup water or coconut milk
- Once marinade and water are combined and heated fold in rotisserie chicken
- Optional: Add veggies
- Continue to cook about 10 minutes or until completed heated and combined.
- Optional: Garnish with cilantro or thyme
Ingredients
- Chicken (this recipe can be used with other poultry or meats such as pork)
- Jamaican Jerk Marinade (mild or hot)
- Olive Oil
Instructions
- Coat chicken with jerk marinade (marinating optional)
- Place chicken in glass dish and in oven on 400° for 20 minutes, turn chicken and paint with jerk marinade. Repeat twice
- Turn chicken, paint with jerk marinade and broil 3 to 5 minutes. (Chicken can burn easily with broiling so watch carefully)
- Turn off heat and allow chicken to rest in pan for at least 5 minutes covered before serving
